CIEH Level 2 Awards in Food Safety in Catering
Training providers have identified a growing need to make learning more relevant to specific business environments to increase effectiveness. These new qualifications are required to address new National Occupational Standards reflecting sector-specific needs. In line with this demand, the CIEH Level 2 Awards in Food Safety have been designed to address the food safety needs of the catering, manufacturing and retail sectors
Who should attend?
Fundamental food hygiene knowledge for all food handlers
Designed for anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled
Course content
The qualifications cover the following topics:
- Legislation
- Food safety hazards
- Temperature control
- Refrigeration, chilling and cold holding
- Cooking, hot holding and reheating
- Food handling
- Principles of safe food storage
- Cleaning
- Food premises and equipment
Candidates
A maximum of 12 students can be accommodated on this course
Duration
One day (6 hour) programme
Qualification
Assessment method: Multiple choice examination, QCA Accredited
The qualification is valid for 3 years and each successful candidate will receive a CIEH certificate

CIEH Intermediate Certificate in Food Safety
This qualification is designed for people working in food businesses at a supervisory level. It would also benefit those responsible for quality assurance, raw materials buying, customer complaints investigations or on-the-job training. Candidates who complete this qualification successfully will be able to supervise and train in food hygiene, and monitor and audit hygiene standards
